I love salads! There, I said it! They’re so versatile and you can mix and match anything to bring out different flavours. This is the first time I’ve used Cous Cous in a salad, and boy did I like it. I was inspired by this recipe.
Serves 6
What you’ll need
1 cup baby spinach leaves
1 cup chopped mint leaves
3/4 cup spring onions, chopped
3/4 cup uncooked cous cous (about 1 1/2 cups cooked)
5 medium-large sized strawberries, quartered
1/3 raw lightly salted walnuts
1/4 cup danish feta cheese, crumbled
handful of sprouts to garnish
Start by cooking the cous cous. While it sits in a bowl with boiling water, mix all of the greens (the spinach, mint and spring onions) into your salad bowl.
Next, sprinkle the cous cous over the bed of greens. Add the strawberries & walnuts evenly. The feta comes next, using your fingers, crumble the cheese over the salad in the bowl. Garnish with the sprouts.
It’s as simple as that folks. I used some lemon juice in lieu of dressing – divine. Treat yourself with this quick to make salad.
It’s great by itself, or serves as a wonderful side salad to any cooked meal.
