Mint-Lemonade-Slushie

There is a restaurant called The Witch’s Cauldron and whenever you go in for breakfast, they give you a free green juice/slushie thing. We’ve always tried to figure out what it is, we can definitely taste lemon, and mint. So I thought I’d try re-create it at home. Because, it’s seriously AMAZING.

Doing some research I decided that to make the version I wanted, you will need the following ingredients:

Serves 2

2/3 cup of water (using 1/3 cup at a time)
2.5 tbs of brown sugar
1/3 cup freshly squeezed lemon juice
2 cups ice
2 generous handfuls of mint leaves

Method

Step 1. In a small saucepan, combine 1/3 cup of water with the brown sugar. Heat the water and stir until all of the sugar is melted. Set aside for 5 minutes until the sugar water cools

Step 2.  In a blender, combine the sugar water, lemon juice, ice and mint and blend until you have a slushy-like texture. If you want it to be ‘super’ slushy, add more ice until you’re satisfied :)Blender

You’ll want to serve this immediately to avoid it melting, otherwise, store it in the freezer until you’re ready to serve.

Green-Lemonade

This tastes ALMOST as good as the one at The Witch’s Cauldron. It might be a bit sour, but add some bacon, eggs, toast and you’ll be good to go. This also makes for a super refreshing drink in the afternoon, go on, treat yourself – aren’t green juices supposed to be healthy these days *wink wink* Love Megs xo
