I was out at breakfast the other day and my friend ordered Chorizo & Spinach. I had serious food envy, and was instantly reminded of my love for Chorizo. I decided to adapt this recipe.
Ingredients (Serves 6)
6 chicken breasts
1 tbs olive oil
2 garlic cloves, grated
2 tbs ground oregano
2 tbs rosemary
1 tbs lemon juice
1 red capsicum, cut into 2cm cubes
1 green capsicum, cut into 2 cm cubes
4 chorizo sausages
Step 1. combine the chicken, oil, garlic, oregano, rosemary and lemon juice in a bowl and refrigerate for 2 hours.
Step 2. Evenly thread the chicken, capsicum and chorizo onto the skewers
Step 3. Heat a BBQ on high, and cook the kebabs. This takes anywhere between 6-10 minutes, you want to make sure that the chicken is cooked. We like ours super charred.
I served mine with a salad. You could also serve with Peri-Peri & Garlic couscous.
