Peri-Peri & Garlic Couscous - Megzie


I’ve only just discovered the wonderful world that is ‘couscous’ – I know, where have I been right? Anyway, it seems like such a versatile food, that I thought I’d throw some flavours into the mix and see what happens. And so was born the Peri-Peri Garlic flavoured Couscous (sorry to all of you who aren’t spicy food lovers!)


2 cups of couscous
2 tbs garlic butter spread
a drizzle of Nando’s hot peri-peri sauce (depending on how spicy you’d like this you can add as much, or little, as you like)


Step 1. Pour the couscous into a large bowl, and shake so that it fills the entire surface evenly. Add the 2 tbs of garlic butter on top.


Step 2. Boil water and pour over couscous until it’s all covered with about 2mm extra water on top. Stir the couscous and garlic butter together until it’s melted through.


Step 3. Add however much peri-peri you would like to (without mixing), then cover and set aside for 7-10 minutes.


Step 4. Stir well to mix the peri-peri sauce into the fluffy couscous


Dish up, garnish with parsley if you like, and enjoy!


I had mine with salad and honey soy chicken kebabs. Delish! Love Megs
