Final-Icing

I can never remember a good icing recipe when it comes to cookies. This one is simple, sweet and delicious. It’s also very durable and can be thickened up for piping and then watered down for flooding.

1 1/2 cups icing sugar, sifted
1 eggwhite
1/2 tsp lemon juice

Method.

1. Whisk together the eggwhite and the lemon juice

2. Slowly add the icing sugar, whisking as you go – you want to make sure that you’ve got a smooth mixture

3. Whisk until the icing is well combined and smooth. If you’re piping the icing, you’ll want to make sure that it’s nice and thick. If you’re flooding, add a couple of drops of water to make it smoother so that it flows and blends back into itself.

Add some food colouring if you want to colour the icing.
