Well it is true. And it’s called Chia Seed Pudding. It’s so easy to make as well. You can make it the night before so that it’s ready to go. Chia is high in protein and rich in Omega-3. What I didn’t know about them, is that they can swell. I’ve always sprinkled them over salads for their benefits. Can’t even tell you how my life has changed since the discovery that they swell.

This is a Blueberry Chia Seed Pudding.


1 tbs white chia seed
1 cup coconut milk (you can use coconut cream as well)



1. Put 1 tbs of chia seeds in a bowl / jar


2. Add 1 cup of coconut milk and stir well


3. Let the mixture sit for about ten minutes, stirring and mixing every now and then. This ensures that the all the seeds will swell nicely. Once you have a ‘paste’ like mixture, add the blueberries and eat up. You can also add some cinnamon or vanilla essence if you want to make it a little bit sweeter.


The Chia seed and coconut mix works well with a whole bunch of different fruits. I like Mango and Kiwi. I’m sure there are heaps of other combinations to try out. Hope you like it! Love Megs xo
